Jasmine produces dark green leaves and delicate white flowers. To ensure the highest quality aromatic compounds, it’s important to harvest and extract the oil when the plant is in bloom. Jasmine blossoms open in the early morning hours before the sun gets too hot. They are carefully handpicked (typically around 2:30 a.m.) about six months after being planted. Each harvester—mostly women—is assigned a certain number of plants that they must pick the flowers from daily. The harvesting season begins around June and lasts a few months. The flowers are too delicate for steam distillation. Instead, a solvent extraction process is used to produce the absolute. The absolute needs wax and paraffin to extract the volatile aromatic compound to make the end product as potent as possible.
